Tarte du brugnon et Pêche ( Nectarine peach tarte)

My managers birthday was yesterday so i thought i would kiss some ass by baking something. So i did. I managed to pull this off in about 3 hours after getting off my closing shift at work. I made a peach nectarine tart all from scratch. It was my first time making a layered fruit tart. Im used to the berry/ rustic tartes. So basically its just your simple Pâte Brisée for the crust. Then some ripe nectarines soaked in sugar, cinnamon, spiced rum and a bit of lemon juice. The peaches i did not soak instead i layered them on top of the layered nectarines on the bottom and then i dusted the peaches on top with super fine sugar just to get that nice glaze. Then just bake and viola! Now thats one beautiful tarte :)





Thats a pie cooling tent! To keep away the bugs, dust, and whatnots! :)
