Now, for personality! In a lot of ways, Xion seems to be a lot like Roxas. She very uncertain about her own existence and the meaning thereof - even more so than other Nobodies because she doesn't even have human memories to back her up. It does not mean she's spineless or shy, just that she's not sure of much; it's a fine distinction to make. So, for example, it'd make sense for her to have an underdeveloped morality / philosophy of life. But please don't have her stammering all over the place or tiny-fonting every other sentence.
Moreover, she's ignorant, not stupid; if there's information about the world she can pick up just by observing, have her notice it. You don't have to spoonfeed her all the facts about the world (ex. that people stop at red lights and go at green - not that this seems likely to come up, but just as an example). In fact, given the amount of information she has to absorb just to keep up, she should be fairly quick on the uptake. And she's obviously got a fair bit of initiative to leave the Organization in order to go after her own answers.
Riku really offends her when he calls her a fake, and I'd peg that as one of the cornerstones of her character. She also doesn't like being weak or useless. If you've read the secret reports, you know that she frets a fair bit when she stops being able to use the Keyblade. It's not out of pride, though - she clearly doesn't mind as long as Roxas and Axel can help her out with it, which implies that it's more out of a sense of responsibility. She has tasks that need to be fulfilled, and so feels obliged to do them!
With Xion, though, I think the toughest thing about playing her right now's going to be working with the rest of your cast. Thanks to the game's end, we know that those who weren't directly involved in her creation (i.e. everyone after I-VI, I assume) probably won't remember her post-game. Not to mention the ramifications she has on any Roxas in play just by existing. I feel like I'm stating the obvious by saying this, but be sure to work out the details OOCly - if it goes smoothly, it could be a lot of fun.
Good luck!
