Vanishing Oatmeal Chip Bars

Ingredients

½ cup (1 stick) plus 6 tbsp butter, softened.
¾ cup firmly packed brown sugar
½ cup granulated sugar
2 eggs
1 teaspoon (tsp) vanilla,
1 ½ cups all-purpose flour
1 tsp (teaspoon) baking soda
1 teaspoon cinnamon
½ teaspoon salt (optional)
3 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup chips - chocolate, butterscotch or other desired flavor

Step-by-Step instructions
1.  Heat oven to 350 (degree) F.    In large bowl, beat butter and sugars on medium speed of electric mixture until creamy.
2.  Add eggs and vanilla; beat well.
3.  Add combined flour, baking soda, cinnamon and salt, mix well.  ( ½ cup to ¾ cup at a time works nicely.)
4.  Add oats and chocolate chips; mix well.
5.  Drop dough into 9x13 inch baking pan (larger pan for thinner bars, smaller pan for thicker bars), and spread dough out, pressing firmly.
6.  Bake 8 to 10 minutes or until light golden brown.  Cool one minute upright, then flip upside down and move to wire rack.  Cool completely.
7.  Cut into strips or bars, and serve (or, bake before hand and store in a covered container).
