that Scottish food?

Watching an episode of No Reservations set in the UK, the host was in Scotland, being shown around by author Ian Rankin (author of Rebus), when Mr. Rankin pointed out "fried haggis, pink meat, and king rib."

King Rib turned out to be something shaped to look like a rib. (my Closed Captioning chose that moment to shut off, so I didn't catch if it was a meat or not)

Fried Haggis seems fairly self-explanatory.

But does anyone who knows things Scottish know what Pink Meat is?
