I had some leftovers in the fridge.
Crustless Leek Quiche
Grease 9x9 pyrex pan
Set oven to 350 F
6 eggs
1 cup cottage cheese
1/2 cup milk
2 cups chopped leek (one long leek)
1/2 onion, chopped
1 cup chopped boston butt (ham or bacon will work)
shredded cheese of your choice
Saute leeks and eggs in olive oil over medium for about 5 minutes. Remove from heat and let cool.
Beat eggs.
Add cottage cheese, shredded cheese, milk
Add pork and leeks.
Pour into baking pan and bake for 30-50 minutes.
