The other night I made up some Masala Kheema Baigan - curried ground meat with Eggplant.
Fry a few bay leaves, cardamom pods, pepercorns, cinnamon stick and whole cloves. Add an onion-garlic-ginger paste. Fry to golden. Add some ground curry powder or garam masala. Add a pound of ground lamb, pork or beef and chopped tomato. Cook covered for 10 minutes. Add an eggplant cut into 3/4-inch cubes. Heath through.
Yum.
Tonight, I reheated a serving, and made up the following:
Pav Bhaji made with Cauliflower, potato & onions.
