Autumn cooking

CSA season is almost over.  I'll be off the hook for about 12 weeks, but it also means I don't want to waste anything from what we are getting.

With cauliflower, butternut squash, little apples, carrots, and leeks in the CSA box this week, (and more)  I went a little overboard, trying to get ahead of the game and use a bunch of stuff at once.

The bad news is that I was in the kitchen forever.

The good news is that I have found a way to get the husband to eat orange starches. Apparently I just needed to put sausage in it!  (I really should have thought of this before )

So, at the expense of much time and alot of dirty dishes, dinner was:

Roasted Butternut squash & sausage soup, topped with tarragon oil - Find the recipe here  (1 change:  left some sausage unblended so there were sausage chunks to give the soup a bit more texture.)
CSA usage:  used up an entire butternut squash, plus leeks, carrots, and some celery.

Cauliflower gratin with guyere&parmesean cheese. - Find the recipe here
CSA usage:  cauliflower

Chicken breast marinated in red wine, topped with apple slices and brie.- Find the recipe here  (didn't bother to marinate the chicken overnight, marinated for 2 hours only, then made a bit of sauce out of some of the remaining red wine to serve with the finished chicken)
CSA usage:  Little apples.

The salad was just lettuce. No dressing.  The rest of the food was rich enough that I didn't even put oil and lemon on the lettuce.   CSA lettuce, though, so, continuing to work my way through the box.

Unfortunately, the picture below makes things look a bit yellowy.  It doesn't show how purple the chicken breast was, or how orange the soup was.



I doubt I would make all these things at once again. It was a craziness of a few hours.  But it was all very very good,  I actually enjoyed the cauliflower, a rarity for me, and Kevin actually finished the butternut squash soup in his bowl.  So, now I'm thinking about other options along the same lines as that soup....pumpkin and sausage?  Sweet potato and bacon?  Acorn squash and ham?

Actually, it's getting too late to think about anything really, and with the kitchen finally clean again, I believe it's time to do an entirely different kind of vegging for awhile, and then go to bed.
