Well, it depends on both the maxis hair and the hair you're replacing it with. Basically, the replacement hair can't have more groups than the original. But also, the groups need to have the same name. Most of the time, the groups are called hair, hair_alpha3, hair_alpha5, hair_alpha7, etc. But sometimes the replacement hair (if it does have few enough groups) will have groups that are called hairalpha3 (without the '_') and that'll have to be changed for it to work. I use Milkshape to do that, but if you don't have Milkshape, I think you can also use SimPE.
Sometimes you can also limit the amount of groups a replacement hair has, by changing hair_alpha5 to hair_alpha3, so you end up with just parts that are called hair and hair_alpha3. Just make sure that those groups were already using the same textures. And as a rule, never change all the groups to 'hair', because that one works a little different than the rest.
I don't know if you can follow what I'm saying here, cos I've been doing this for a while and most things I've found out by trial and error. I still don't get everything myself.
