More greens, and a sweet rice pudding success!

Wow, lj  just deleted half my post... damnit lj!

Okay, well my first paragraph was me bitching about having no energy this week, being lethargic, working from home a bunch, and being super-de-duper bloated tonight. Now you are saved the pain of reading a whole paragraph about my miseries...

Anyways, yesterday I tried making rice pudding for the first time! It was a sweet-sticky success, and deeelish and comforting.

The recipe was simple enough:
- cook 3/4 cup rice in 1 1/2 cups water
- combine rice with 1 1/2 cups milk, 1/3 cup sugar, 1/4 tsp salt
- cook over medium heat for 15-20 min
- add in 1/2 cup milk, 2/3 cup golden raisins, 1/2 tsp vanilla extract, 1 tbsp butter
- serve warm topped with cinnamon or nutmeg

But following a recipe (unless baking) so isn't my style... and I even wrote the recipe down wrong - there's egg in my ingredient list, but I have no clue when it was supposed to be added, haha... This is what I ended up doing, after following that guideline above:

- cooked the rice as above. Boiled it over. Oops.
- added in 1 1/2 cups organic soy milk, 1/3 cup organic cane sugar, and a sprinkle of coarse sea salt (see? not normal already...)
- cooked, forgetting to stir, for 25 minutes-ish-lost track....
- ate with nutmeg.... DONEEE

I used the soy milk in this, because, well, I don't drink cow milk any more, and I thought the soy milk would add a nice nutty flavour - which it did. It thickened up just as nice as any milk, too. I used the cane sugar a) because I got it a while ago and haven't used it yet, and b) it's not as sweet as table sugar, and since soy milk is already somewhat sweetened (unless you get unsweetened specifically), I didn't want to add more sugar than necessary. Sea salt is my new favourite thing. So it went in. I didn't add the extra milk, because I wanted my pudding thick. No raisins, because warm mushy raisins make me want to puke. And I topped it with nutmeg for a bit of oomph.

YMMMMM!



For the rest of dinner, I had more greens, with some pressed and fried tofu. I discovered pressing tofu a few days back - and I don't know how I missed this pivotal piece of info for cooking with tofu - you have to press out the water that it's been sitting in, so that it can absorb flavours. Makes sense!



After I went to the gym today, which is not so conveniently located on the upper level of Superstore, I saw strawberies and black berries on sale... both large containers for $3 each. I was sold. So were they. To me. It was a happy union!

OOh, wait, I forgot to mention... they were MUTANT GIANT STRAWBERRIES OF PROBABLY GENETICALLY MODIFIED YET DELICIOUS DOOOOM! (in comparison to the full-sized objects on the counter...)



They were honestly the size of small peaches or something... And side note: organic mango = best mango ever. Period.

And that ends this ramble!

However, to leave you on a somewhat more entertaining note, I recently downloaded the new Taio Cruz CD (loving it), and here's my fave song. It's super feel good! (that and behind his sultry voice, it's even better knowing he has a british accent... bahaha)
