So I've been thinking for a while, that it would be a neat hobby if I started blogging about what I eat. I always like trying new recipes, and I've been reading other people's blogs about it for a while - so why not! Especially on the eve of being diagnosed with iron deficiency. I'm already a total foodie anyways, so this just fits. And I'm due for a new hobby. Let's give it a shot!
Soooo in leu of realizing that if I don't change something I will become anemic, I'm going to start eating more iron friendly foods while taking the supplement that I was prescribed.

And I listened! But I did it my own way...
Canned salmon, organic green lentils, and a collard greens/bok choy mix with shallots, garlic, and oyster sauce. The salmon, lentils, and collards/bok choy are great meat-free sources of iron. The wine is there, because apparently it helps iron to be absorbed! Works for me!
I did some research, and learned that iron absorbs best when it is eaten with other iron - this is because there is essentially two different kinds of iron. Organic (or heme/haeme iron) is iron from an animal source (like your beef, chicken, and fish), and is about 25% bioavailable (that means 25% of it is readily absorbed in the gut). Non-organic iron (non-heme iron) is the iron present in leafy greens and legumes (like my lentils, bok choy and collards) which is only about 5% bioavailable. When you eat both kinds of iron together, apparently it maximizes the absorption overall! So combining both types of iron, the supplement pill, and a glass o' wine... Hopefully it'll be a boost to the 'ol bone marrow, and increase my iron count.
Unfortunately, as my dad told me tonight, it'll be a few weeks until I notice any effects of the iron mega-dosing. Hopefully my energy will go up... which would be nice, because I don't feel crazy fatigued. Well, now I do, since I should feel that way! But we'll see what happens.
In other news, I'm trying to decide what to get for Kevin for his birthday. I'm already taking him out to the Roots concert, 2 days after his birthday, because he really wanted it (he knows I have the tickets, so I need to think of something else). I might get him a CD of an artist that he's really into at the moment - Jill Scott. Maybe a nice ring - not one with any crazy meaning behind it, but he's mentioned he wants an accessory ring before. I just have to try and not spend too much money on him, which is difficult for me to do... I like the ring idea :) Certainly better than getting him another video game!!
I'm home alone for two weeks now - so it'll be work, gym, and cooking. Unfortunately gym already lost the battle to tiredness tonight. Hence my crazy iron foods! Tomorrow though, tomorrow... Denada...!
