Yes...the end of summer is approaching! WWAAAAHHHH! It is so sad! So this week I am enjoying these last couple days with relaxing and taking things easy. I can't believe it is tuesday already. I have little things here and there to get done before I go back to work, but nothing major.
A bunch of us got together for dinner on Sunday night at Larissa and Seth's. It was good times as usual, and the weather was great. So we hung out on the deck for a majority of the evening. I tried this new easy casserole for the dinner called warm chicken salad. So good! Here is the recipe:
2 cups, cooked diced white meat chicken
1 cup mayo
1 cup grated sharp cheddar cheese
1/2-3/4 cup of chopped celery
1/4-1/2 cup of slivered almonds
1/2 tsp. each of salt and pepper
Mix all together, put into a sprayed casserole dish, and top with crushed potato chips. Bake at 350 for 20 minutes or until bubbly.
It was a hit! I am definitely making that again. And I bet you could put all kind of stuff into the chicken salad and it will be awesome. Speaking of food, I got these gnocchis with pesto at Trader Joe's and can't wait to try them tonight with some leftover sauce I froze from my last pasta dinner. YUMMY!!!
Well, I better get going. I am waiting on a girl who was in my conducting class this summer to drop by and pick up some textbooks for the current trends in music education class I have. She is taking the course this fall, and I figured I don't use the books. Might as well save someone else the money!
