Last night, I was tired and peckish. I decided that the packet of ginger nuts in my cupboard needed to be made a little more interesting... So I made buttercream, and sandwiched them together, almost like the crunch creams I miss so much! I'm really tempted to try and make whoopie pies, but these will do until then. The buttercream is extremely vanilla-y, as it also has custard powder in it as I was trying to thicken it up a bit, but to no avail. I had lots left over, so when I woke up early this morning, I had to make cupcakes. I decided to try the Velveteen cupcakes from VCTOTW with the intention of sending them to Rhian, but they've once again not come out red at all. They're also not dark brown like proper chocolate cakes should be, but they're still delicious. I've left the best 6 un-iced as I can't decide how to top them ready for their journey to the Netherlands (the vanilla buttercream hasn't got a chance in hell of surviving the trip!), so depending on how they turn out, Rhian's cakes may be sent today/tomorrow, or they may have to wait until I've made cakes I'm happier with. Anyway, these are a great excuse to show off my lovely new cake stand, courtesy of Mum and Auntie Deanna. Here we are on our way out last Friday night, it was lovely to see them again!
