TGIF! ... and cookies!

Yay! It's Friday, and I have an extended lunch hour today to go eat with my Darling Man, my foster brother and his wife, and several friends from across the country who have come to my foster brother's retirement from the Ohio National Guard tomorrow.

Last night I made my foster brother homemade chocolate chip cookies as a delayed birthday present (his birthday was this past Monday), and I'm so happy with how they turned out. I didn't burn any of them!

You see, it turns out that the thermostat on our oven runs about 25 to 40 degrees F too hot.  So if I put it on 375F like it was supposed to, I'd charcoal the cookies at 400F-415F temps.  I got an in-oven thermometer, and set the thermostat to 355F and they turned out just right.

And I discovered that I can use Eggbeaters (tm) in the recipe instead of real eggs without any change to the flavor or consistency of the dough.  (Our regular eggs got frozen because my autistic son turned the fridge temps to super cold!)  So I might just continue to make them that way.  Of course I refuse to use anything but real butter in them, so I'm afraid that they aren't THAT cholosterol friendly... but they taste great! :)
