Yesterday I tried out
this recipe for gin-and-tonic cake, which a Twitter friend passed on to me. As the name suggests, it contains both gin and tonic, as well as lime and crushed juniper berries. It may sound a bit weird, but the results are fabulous: a deliciously moist citrussy cake that tastes EXACTLY like gin and tonic. It’s almost magical. (Well, if you like gin and tonic. WHICH I DO.)
It’s a US recipe with measurements in cups, so I used
this conversions page to work out the quantities. My only problem was that something went slightly wrong when I made the glaze: I should probably have let it cool down more before pouring it over the cake, so it doesn’t look as aesthetically pleasing as it should. It tasted fine, but if I make the cake again, I might use a simple
water icing with lime juice instead.
