i learned how to make guacamole from trader joe's

my guacamole always gets rave reviews. it's simple and pretty much un-fuck-up-able:

2 ripe avocados, cubed
1 large clove of garlic, chopped (2 cloves for garlic lovers)
1 jalapeno, chopped, w/seeds (2 jalapenos for heat lovers)
1 roma (or other medium sized tomato, or even a handful of cherry tomatoes), chopped
1 shallot, chopped
juice of 1/2 lime
salt to taste

combine all ingredients in a bowl; mix together until avocado is mushy-but-lumpy. serve with chips or as a topping for burgers, sandwiches, tacos, eggs, etc.

this is my base recipe. i add more jalapenos and/or garlic depending on for whom/what i'm making it. sometimes i substitute sweet peppers (red, orange) for the tomatoes. because of the lime it will keep for a few days without turning brown.
