I made a yummy soup for dinner tonight : Green Lentil and veggie.
First I sauteed a leek, then sweated French Green Lentils, which keeps them firm (Thanks to Cook's Illustrated for this tip). Then de-glazed with red wine and simmered that down. Added veggie stock, and chopped carrot, red capsicum, celery, and home-grown red chilies. A few bay leaves or so, and simmered until the lentils were tender. Adjusted the seasonings and added soy-miso. Yum!
