OK, your location is terrific. Makes it a lot easier to figure out what to do with that short day on Saturday.
Go to EPCOT on Saturday. You are right next door. You can walk to the entrance to World Showcase. If you want to have a nice dinner there, make your reservation ahead of time. My faves are Japan and Italy but I also really like the Morrocan restaurant and it is typically not very busy.
The thrill rides are going to be busy but you don't care for them much anyway. So go to "Honey, I Shrunk the Audience" and Maybe "Journey into Imagination." if you want. There won't be any line to speak of. Soarin' is a fun ride (and pretty mellow) but it is a slow loader and you won't be able to get a fast pass by that time of day so you can expect a VERY long wait.
Actually, though, I would spend my time wandering World Showcase. Watch the movies. Catch some of the stage acts. Find yourself a spot to watch Illuminations around 8:30. My suggestion is to locate yourself on the Spaceship Earth side of the lagoon. The view is best from there in my opinion.
You have touch choices to make on the other days. If I were you, I would skip MGM Studios. You don't like thrill rides and while I could talk until I'm blue in the face about why you should go on the Tower of Terror anyway, it isn't your thing. The main thing you will miss is "Fantasmic" and while that is a great show, you are better off going to the Magic Kingdom.
So go to the Magic Kingdom. Because you don't like thrill rides, you have a lot of flexibility.
BUT GO ON SPLASH MOUNTAIN. I know you said you don't like thrill rides. Forget that it is a thrill ride for a moment. You said you like the "Disney" stuff and the animatronics on Splash Mountain are fantastic. So go there first, ride the ride and you can spend the rest of the day shaking it off. I swear you won't be sorry. I don't care for flume rides at all and I ride it at least three times every time I'm at Magic Kingdom.
If you want to, I'd ride Big Thunder Mountain Railroad next. It is a very tame roller coaster and the design is super cool.
If not, you should proceed to Fantasyland and ride stuff like Peter Pan's flight before it gets busy. Everyone is headed to either Space Mountain or Splash Mountain when they get to the park. Once they do one, they will hot foot it to the other. They won't get to Fantasyland for a couple hours. So get there first. Hit the Haunted Mansion on the way.
For lunch, MAKE A RESERVATION AT THE CRYSTAL PALACE. You need to do it before you head out to Florida. You should do it now if you can. It is a buffet and has the best food I've eaten at the Magic Kingdom. And it has Winnie the Pooh characters. You can't go wrong!
You like the Swiss Family Robinson Tree house but don't hurry to get there. It is never crowded.
Don't miss Buzz Lighyear's Space Ranger Spin. Not a thrill ride but a lot of fun.
The Share a Dream Come True parade is at 3:00 that afternoon and because of what you say you like, you should plan on seeing that.
Wishes is at 10:00 but take my advice and Don't watch it from the Contemporary resort.
Two reasons why.
First, it is designed to look the best from in front of Cinderella's Castle. You'll be at the wrong angle if you are at the Contemporary.
Second, you'll miss the Spectromagic parade. There is one at 9:00 and one at 11:00. With Wishes at 10:00, you'll either have to leave for the contemporary before you can see the parade or possibly not get back to the park in time and Spectromagic is jaw droppingly fantastic.
On Sunday, since you are flying out late, go to Animal Kingdom. It closes earlier than the other parks so you will have plenty of time to see everything.
"Festival of the Lion King" is a show you should see. As is the bird show. The two animal trails are essential along with the Kilamanjaro Safari ride (not a thrill ride). "Dinosaur" is pretty cool. It is a moderate thrill ride but it has a lot of Disney special effects that you'd probably like.
If you can stay that late, the Jammin' Jungle Parade is at 4:00 and it is a really good parade.
Oh, and definitely see "It's Tough to be a Bug" in the Tree of Life.
Those, for what they are worth, are my suggestions.

The only thing I might disagree with from your suggestions is Saturday at Epcot. I'm not sure paying for the extra day is worth it - the park is only open until 9 and the earliest I could get there is 5:30 - maybe later. I need to get a copy of the itinerary of what we're doing before making that determination. I've spent more time in Epcot my last few trips, so I'm pretty familiar with the older stuff. I might get what I need out of Epcot on our "free" day there.
I may spend the evening with my coworkers at Downtown Disney instead since most of them aren't flying out until Sunday.
I really like your suggestions for Sunday at MK and Monday at AK. I think that is probably what I will do.
I promise to go on Splash Mountain - I've been before and love it. And the Crystal Palace suggestion is one I remember from your post about the place. I'll definately look into that one.

I would totally check with your doctor. You are first trimester. Pat went on most of those rides when she was pregnant with Devon and there was no issue. They post that to cover their butt. I would think that the milder "thrill" rides wouldn't be a problem for you.
