LJ Cooks: Eggplant help needed

I have a large and a small eggplant, and I should cook them tonight. I've cooked eggplant with tofu, and with potatoes. I'm not a big fan of eggplant parmesan. What do you think I should make with these things?

I have plenty of meat dish leftovers, so bonus points for vegetarian. In addition to the eggplant, I have: carrots, zucchini, potatoes, and a small amount of broccoli, plus the usual onions and garlic and the common spices. And I could stop at the grocery store on the way home from the gym, so I'm not really all that limited if you you have something fabulous that needs something other than the veggies above.
