Go ahead and start with first-ever appearance of Jack from the first season of DW, five consecutive eps: "The Empty Child"/"The Doctor Dances", "Boom Town", "Bad Wolf"/"The Parting of the Ways".
Things you need to know but not necessarily watch: DW season 2 took place before TW aired, and it was early in this season of DW ("Tooth and Claw") that the Doctor was present in 1800-something when Queen Victoria founded the Torchwood Institute, which was meant to help defend Britain against alien threats. Then, at the very end of DW S2, the Doctor was present in 2006 at the massive fuckup that caused the collapse of Torchwood One, the main branch of the organization stationed in London. ("Army of Ghosts"/"Doomsday") This is handy backstory for Ianto, who is a former Torchwood One employee.
The beginning of the actual show Torchwood fits here. Season 1 goes uninterrupted but ends with Jack vanishing into thin air. To follow him, you have to go back to DW, the season 3 finale: "Utopia"/"The Sound of Drums"/"The Last of the Time Lords".
Then watch TW season 2, uninterrupted. TW and DW's seasons were staggered that year, so DW ended a few weeks after TW and featured the appearance of the entire TW cast in the DW finale: "The Stolen Earth"/"Journey's End". I would not recommend these episodes, though, because they SUCK ASS and singlehandedly put me off of Doctor Who forever because of some FUCKING BULLSHIT. BULL. SHIT. *cough* Sorry. I'm still bitter.
Then come the 4 full-cast Torchwood radio plays, each of which is one hour, which are optional to listen to but lots of fun if you do. (Lost Souls, Asylum, Golden Age and The Dead Line.) And then comes the current TW season, the 5-part "Children of Earth" miniseries. And that'll have you totally caught up. :D
I think you (and anyone, really) would like TW because it's just so shameless. It has a team dynamic that is almost House-like, including their boss being a total dick a lot of the time, and it's just so gleeful about its own cheesiness. It's obvious from the cast and crew that it's a labor of love, so a lot of its flaws are forgivable. And it has more potential for fangirling and fic than almost any other show I've seen.
SPN should still be Thursdays at 8. Work-related conflict or something else?
Hey. Some shit has happened on Torchwood that has pretty much destroyed me. I still recommend it, but I don't know. I wouldn't be able to watch it with you, I think. At least not Children of Earth, which I may never watch again.

OMFG ICON!! SHOEBOX PROJECT IS THE BEST THING EVAR. Have you read it? I've never met anyone else who has IRL and I've never convinced anyone to read it. It is the best fanfic ever written, IMO.

Do still watch Torchwood! It is very happy and adorable and kinky gay until the 4th and 5th eps of season 3. Don't watch those. Or if you do, be like me and pretend they never happened! I've gone into happy, floaty denial-land right now. Some people are talking about starting a massive fan-created alternate season 3 project and I am def. joining up if it happens. Plus, I've decided to blame everything on the writer (Russell Davies, who is well-known for writing things purely to piss in fans' faces and stroke his own ego) and say that because the whole mess was his craptastic idea, it doesn't count.:)
And if you watch Torchwood, there is a whole world of amazing fanfic out there to delve into. TW fandom attracts a lot of really good writers and there are metric tons of happy gay in fic that is arguably better-written than the show itself.
I recently went back to re-read it and found that due to some Russian hackers, the old SBP journal no longer has the story on it. But some fan has made PDFs of everything and SBP Aloud (the fan-recorded audiobook) is still going strong :D
