I make this all the time - I can't believe I haven't posted it. I developed it to go with pan-fried, nut-encrusted tilapia; I can post that at some point if anyone wants it. The sauce is also great with other fried goodies, like shrimp (mmm - coconut shrimp!) or chicken. Or really just suck it up with a straw - it's that fucking delicious.
And I'm trying like mad to think of something the sauce would work with for my vegetarian friends but I'm coming up blank...PLEASE MAKE SUGGESTIONS.
Orange (Awesome)Sauce
Serves 4
1 cup fresh squeezed orange, tangerine or blood orange juice
1 tsp dijon mustard
1-2 tsp honey
1-2 tsp lemon juice (optional)
2 TB cold, unsalted butter
Place juice in a small sauce pan and bring to a boil over medium heat. Reduce heat so it doesn't boil too rapidly (it will boil over so be careful). Cook until the juice has been reduced to 1/2 cup. Remove from heat and whisk in the mustard and 1 teaspoon honey. Taste it - you want a sweet-tart sauce; adjust to the flavor you want with more honey or a bit of lemon juice - hard to tell how much, because this will depend on how sweet the juice was to begin with. Once you like heem, whisk in the cold butter until it is incorporated. Taste and add a bit of salt if needed.
Keep warm until you serve it, but do NOT return to the heat or the sauce will break. I kinda just keep it stove-adjacent...
