O! Watermelon!

Watermelon is seriously my favorite thing about summer. ('cause you CAN eat the rest of the year, but it just doesn't taste the same - other fruit does okay, and you can even freeze berries - but watermelon is only at it's best when it's fresh and in season)

In fact, there have been summers when I literally LIVED off of watermelon. I'd have breakfast, but one or both of my other meals would often be just a big ol' jewel-red, juicy-sweet, slab of watermelon.

(And there are few disappointments in life akin to the sense of waste you feel when opening a watermelon that is revealed to be bad - mushy in the middle. Agree?)

How do you feel about corn on the cob? Zuchini? Summer (crookneck) squash? What about peaches, fresh strawberrie, Rainier cherries?

We generally stick with the basic $3.99 grocery store watermelon - getting the biggest one (or two!) we can find.

Yet another reason I am often glad we have two refrigerators!

Oh, this is SUCH excellent chicken. We often slice the breasts in half horizontally because they are SO thick.

Mmm, romano cheese. We typically stick with the basic cheeses - chedder, motzerella, and parmasan. Oh, and cottage.

I forget to say we ALSO have the remains of side of beef we bought from one of our rancher friends when they butchered last year. I think we have a couple flanksteaks, some rumproasts, and maybe a few t-bones left.

And, by the end of the summer, we'll probably have a case or two of strawberries, sliced and bagged and frozen in there as well. (you know, you can freeze just about anything - Bananas are WONDERFUL, like natural, sugar-free ice cream. So are grapes, surprisingly. Bell peppers are too mushy to hold shape when thawed, but you can still use them in sauces, stews, goulashes.)

It's a good thing we don't garden anymore, or we'd never do ANYTHING but prepare and store and fix food!
