so i'm a believer that an empty wallet and a relatively empty cupboard make for the mother of all invention as far as cooking goes.
that being said, this is what my hungry belly created tonight:
empty cupboard lentil soup
1 can of organic lentils, drained but not rinsed
1 small sweet yellow onion, roughly chopped
3 cloves of garlic, minced
1 small zucchini
2 vegetable bullion cubes
2 cups of water
1 bay leaf
a dash of turmeric, parsley, and old bay seasoning
salt and pepper to taste
saute onions and garlic until done. add zucchini, cook a minute more. then add lentils, stir together. add bullion cubes, crumbled, and stir. then add water and seasonings. bring to a boil for a couple minutes and then stir and serve. easiest thing EVER! makes a small amount, only enough for about two hearty servings.
delicioussssssssssssssssssss! if only i had some crusty bread... mmm.
