I made some cookies!!
These are marzipan and chocolate dough cookies, dipped in coconut, mixed chopped nuts, crushed almond flakes, or dusted with icing sugar.
I rolled a packet of white marzipan (250g) into small balls, marble size. I think there were 50-55 of them.
I melted 150g dark cooking chocolate with 30g butter in a pan on low heat til melted, turned the heat off. then added a couple of drops of vanilla essence, half a can of condensed milk and 100g of 80% pl flour, made into a dough, supple enough to handle, but not sticky.
I pulled a piece of the dough off and wrapped it around the marble. Then rolled in one of the toppings or left bare.
I did exactly the same using white cooking chocolate, BUT, the chocolate was not as runny as the dark, and then once combined, it was so sticky, I had to add lots more flour, keep stiring and then mixing with my hands until I had the required consistency.
They were placed on a dry (unfloured, ungreased baking tray)
Cooked on 180C for about 10mins. With the first batch they looked very soft, so I left them for 14mins - mistake, they are very hard!!
When they come out of the oven, leave to cool for a couple of minutes before putting on a cooling rack. If left plain, once cool, dust with icing sugar through a sieve.
NOTE - I just remembered, in US they call marzipan almond paste!
