Hawthorn and Sultana Wine (1DJ)
2.25l Hawthorn berries
360g sultanas
1.25Kg sugar
Pectic enzyme
Citric acid
4.5l water
campden tablet
yeast (A) and nutrient
Rinse berries, pour over 6pts water.
Leave to cool.
Crush the berries
stir in pectolase, campden tablet and acid.
24hrs later add sultanas, sugar, yeast and nutrient.
Stir daily for 5 days.
Strain into DJ
