Sloe wine with sultanas. (1 DJ)
1.5Kg Sloes
.25Kg Sultanas
1.5g Sugar
3.5l water
Yeast (a) and nutrient
Pectic Enzyme
Day 0
Put sloes in bucket, Mince sultanas and add. pour over then the boiling water. Add 1 campden tablet.
Day 1
Add pectic enzyme Add yeast and nutrient, and 1Kg sugar. Stir well and leave.
Leave for 10 days, stirring each day.
Then strain.
Pour into a DJ pouring over 500g sugar.
After 4 weeks taste, if bitter add more sugar.
