Egg Drop Soup

Nov 14, 2010 18:56

So I've been recovering from a cold this past week, which is never fun. And since my kitchen is stocked on a tiny budget, I didn't really have anything on hand for when the cold first hit me. I was too sick and too tired and too wary of the rain to go to the grocery store to buy anything, so I examined the pitiful ingredients I had on hand. Chicken bouillon cubes. Eggs. Hmm.

Egg Drop Soup

Heat up some chicken broth or boil some water with a bouillon cube. Heat up enough for one person. (For me, it's about three cups). While the soup heats, scramble an egg in a bowl. When the broth comes to a boil, add the egg in all at once, and then quickly stir it in. Serve immediately.

You can make this for more than one person. Use at least one egg per person.

It's delicious, nutritious, extremely easy, and extremely cheap. I've been eating it all week.
