Week 10: I was out of town, visiting Jake in Michigan while he defended his Master's.
My sister picked up the farm share and she got:
2 kinds of kale
garlic
onions with scallion tops
red potatoes
something else I can't remember now
She and her boyfriend get our farm share for the next two weeks while we're in London. I'll ask her (again) to remember what she gets so I can write it down.
Farm share, week 11: red onions, red potatoes, garlic, mint, and two bags of fresh basil
The onions and garlic are just hanging out until we get back. They'll be fine until we can use them up.
Potatoes we used directly after Jake brought them home. Sliced fine with an onion, some olive oil, a sprig of basil and a little salt & pepper, wrapped in an aluminum foil package, and plopped on the grill. About 30 minutes later, they were delicious and the ones on the outside had a wonderful crunchy crust!
Some of the basil was turned into Jake's
panzanella salad:
(Blurry child may or may not be necessary for this recipe)
Take day-old Italian bread, chop into large croutons, toast
In another bowl, mix together fresh basil, several chopped tomatoes, small diced onion, some garlic (either powdered or fresh), cubed mozzarella and shredded parmesan cheese. Toss bread into the vegetable mixture.
Top with a homemade balsamic vinegar-olive oil dressing, let sit at room temperature up to 12 hours before serving. Chilling this mixture will take a lot of the wonderful zing away, so I'd prep it a couple hours before serving and just let everything meld. We served this with grilled chicken breasts and pesto, and our guests brought an Italian pasta salad. Lots of balsamic vinegar in that meal!
The rest of the basil and mint I chopped up this morning, added to ice cube trays and topped with water. I'm just about to pop those out and store in baggies in the freezer until we come home and make
caiperinas. YUM.
The next day, we used up the remaining panzanella, mozzarella, parmesan, etc... and put it into ground beef to make burgers.
The boys waiting patiently while Jake finished up the burgers. They were both absolutely FILTHY from playing in the dirt pile in our backyard.
I'm missing them a lot today, so going through these pictures was bittersweet.
Here's my sweet baby Beo, with his dirty nose, saying "Cheese!"
Ben, not to be outdone.
Leo says "Tasty!" now when eating new foods.
He is also a carnivore, and begins every meal saying "Eat Meat!", lol
Ben has come leaps and bounds with using tableware. He has not made leaps and bounds with potty training, and told Jake the other day "I just like to pee in my pants"
Love you, boys! Mama and Daddy will miss you lots and lots. We can't wait to get back and snuggle you both :-)
