So I thought I'd rear this old horse for a single reason (at least for now).

So in the last year, I've been diagnosed with diabetes. I haven't been the best to myself, even with said news, so I figured I need to do something different.

I was listening to a Joe Rogan podcast with Kevin Smith. Kevin, after a massive heart attack, started a diet that Penn Jillete lost a lot of weight on, which Kevin also lost a lot of weight as well called the potato hack.

I've internet'd a bunch of research. Benefits not only is loss of weight, but lowers cholesterol and even helps increase insulin sensitivity.

The diet seems brutal if you love food like I do. I'll even say I'm addicted to food.

Basically, you eat 3 to 5 pounds of potatoes a day. Plain. Boiled or baked, mashed or straight. No seasonings, bland. The trick is to precook them the day before and store them in the fridge. The next day you reheat it and then let it cool off. You don't eat the potato hot or cold, but in essence room temperature. This process actually converts the starch in the potatoes to something called resistant starch which acts more like dietary fiber.

Anywho, to shorten this blog, I want to use it as a method of tracking my weight and glycemic index.
