Some of you already know that I was diagnosed as diabetic, type 2 last January. For those of you who didn't, I wasn't trying to keep a secret, it just hadn't come up.
At any rate, making fudge has been a Christmas tradition as far back as I can remember (along with a lot of other foods, but I'm a chocoholic.)
Since real fudge has a huge pile of sugar in it, I went on a quest for a low-carb version.
I tried one out, using the artificial sweetner, Splenda.
1) It doesn't not taste fudgy.
2) The consistency is not fudgy.
3) It has the weird after-taste like diet soda.
I now have a pan of chocolate candy made with Splenda. If the after-taste wasn't an issue, I wouldn't mind it, although I wouldn't consider it fudge.
So I'm going back to avoiding artificial sweetners like the plague.
Now I have to get the taste out of my mouth.
