1 whole chicken
1 small butternut squash 1/2 inch dice
2 golden beets 1/2 in dice
2 turnips 1/4 inch dice
1 cup of mixed shallots & garlic
1 orange bell peppler 1/4 inch dice
thyme
marjarom
cardomon
spice mix with chillies, sage & thyme
It smells good. I will have to see how it turns out. May need to puree a bit of the veg. before eating and serve it over rice and kale.
Update - The veg and broth turned out a dark bronz color which did not stain the meat. I wilted the kale in broth then thickened the remaining broth by pureeing 1 cup of the veg and letting it cook down a bit. Put the sauce over veg and chicken. It was yummy. Might skip the turnip next time and just use carrots.
