Calm down a dog!

Hello,
This is my first time posting on a dog training forum. We only got our German Shepherd/Poodle cross about a week ago, but we'd like to get straight in there with good behaviour, so she doesn't pick up any bad habits or think things are OK. I know that we need time and that might be the biggest factor.

Madge seems to not know when to calm down and often works herself up into a frenzy, where she runs and jumps at people. Always in a happy way and never aggressive, but we would like to calm her down in certain situations, like these:

(1) When we leave the house (both of us, so there is no-one except Madge there) she often tries to force her way out. Trying to make her sit on her bed just seems to work her up and distress her further.

(2) When people arrive at the house she'll jump up at them and start running around.

(3) When she has a ball or other dog toy she goes into a frenzy of playing, where her focus is entirely on the object, even if we have it.

In all these situations she can become disobedient, ignoring commands to sit for example.

Do you guys have any ideas about how to calm her down in these situations?
