Here's a recipe that my husband the obligate carnivore actually asked me to make again:

Take a large can of crushed tomatoes (or whole tomatoes which you will crush with a wooden spoon), plus a bit of sugar, some Italian seasoning, and other spices as desired--or use a jar of spaghetti sauce or 2 cans of stewed tomatoes with Italian seasoning, whichever is cheaper this week.

Also buy 1 can of chickpeas--or cook up enough to make 2 cups--and 12 ounces of small sauce-grabbing pasta such as shells, elbow macaroni, or little radiators.

Rinse the canned chickpeas, but save the liquid from the tomatoes. Throw the chickpeas, seasonings, and tomatoes in a crockpot for a few hours. If you have any vegetables that would taste good in tomato sauce, chop them finely and add them along with some water. (I like a couple of smashed garlic cloves.) Meanwhile, put some water on to boil in a big pot.

When the chickpeas are very soft and full of good tomato flavors, cook the pasta. Serve the chickpea sauce over the pasta. You don't need anything else with this, but garlic bread made with margarine is a nice luxurious side dish if there's a sale on it this week.
