I've been planning dinners this week, partly inspired by this show on the beeb called Economy Gastronomy. I sat down on Sunday and hashed out a plan that looked something like this: (we've had dinners 1 and 2)
Dinner 1: Roasted chicken, pasta, and leftover ratatouille. (Steps: Roast chicken, make bread dough and put in the fridge.) (This was delicious.)
Dinner 2: Sweet potato and lentil soup, home-made bread. (The bread was a bit dense, but it never seemed to really recover from being in the fridge. I think it needs less yeast so I can let it rise longer. (I had to punch it down this morning before work.))
Dinner 3: Chicken and vegetable enchiladas (using leftover chicken)
Dinner 4: Butter chicken and brown rice (using leftover chicken... I'd leave it for later, but I think it really needs to be used up at this point.)
Dinner 5: Home-made vegetable pizza (using the second half of the bread dough, which I shaped and par-baked tonight. This will then go in the freezer.)
Nights 6 and 7 are left open as Wednesday is knit night at the pub and lately we've ended up elsewhere on Saturdays. Breakfast (for me) is currently smoothie, snack is an apple, and lunch is leftovers or canned soup. Total spend for all the week's groceries so far is about 50 pounds, (including a large organic chicken) but I'm certain we'll end up spending more, and a lot of what we're using is pantry stuff. Meh?
