Made the Bailey's cheesecake again. I can't get enough of this. Well, I think you can, and it's called weight gain, but fuck that, it's Christmas-time!!!

Irish Cream Chocolate Cheesecake Modifications: Didn't use any cocoa powder in the crust or the base, 3 tbsp of sugar in the crust instead of 1/3 cup, 1/2 cup of Bailey's instead of 1/4, and decreased the sugar to 1 cup (8 oz). I think I'd bring it down to 6 next time, actually.
For some reason, there's no roasting pan in this house, so I had to wing my water bath with this tiny rimmed baking sheet. Lordy. Please remind me to get one when I'm back in Toronto, yes?

Cream cheese is awesome. I mean, really, really awesome, and the best.

What you get when you mix 1/2 cup Baileys with 1/2 cup of Sour Cream... that just sounds like it's bad for you.

I didn't try to be a hero tonight; I left the oven door open while I poured water into the pan, instead of trying to get the filled-with-water-pan into the oven.
