IMO, Gwen is one of the most realistic female characters on television. I love that she makes mistakes, sometimes huge ones, every bit as much as I love her heart and her humor and her ability to kick butt. :-) I think Eve is gorgeous *because* she hasn't "fixed" the little things about her appearance that make her unique and real, like the gap in her teeth.
I haven't written any Torchwood fic in a while, but here are two Jack/Gwen stories I wrote a couple of years ago. I made a conscious effort to be fair or at least kind to their canon love interests in them...hope I succeeded. :-)
Event Horizon - Gwen tries to fight gravity. Jack/Gwen UST, Gwen/Rhys. After Long Silence - Truth comes easier in the dark. Jack/Gwen, mentions of Gwen/Rhys and Jack/Ianto.
