First Attempt At Quiche

It was so good we pied it down our faces so fast that I didn't get a picture of it whole. The recipe is for a lighter quiche lorraine from Shape magazine. Some of the things like using egg whites and reduced fat milk I was able to use, but I wasn't about to buy a whole new thing of nitrate free bacon or reduced fat Swiss cheese when I already had the regular version in the fridge.

Recipe:
3 large eggs
2 large egg whites
12 oz can low fat evaporated milk
1/4 tsp salt
1/4 tsp cayenne pepper
5 slices of nitrate free bacon cooked and crumbled
3/4 cup reduced fat Swiss cheese
4 scallions, sliced
1 frozen whole wheat pie shell (i bought regular roll-out pie crust and it worked fine)

Preheat oven to 375F. Whisk together eggs and egg whites. Add the milk, and basically just mix everything together and pour it into the pie shell. Bake for 45-50 minutes and voila! YuMm!
