Joy of Cooking - a quick soup

Jul 19, 2012 12:00

Around 9 AM, sudden onset of fever. Under 100, but given my recent holes and infections, something I'm keeping tabs on. Anyway this called for soup, but didn't have ingredients for my favorite 'when I'm sick soup' (kale + garlic) which, if we're really honest with ourselves, is all about the broth anyway. Even Florence Nightingale said so*. So, this is what I scrounged up around the kitchen.

-2 packets of Thai kitchen Garlic and Vegetable Instant Rice Noodle (the key to these things is the oil and seasoning, handy to have around, the noodles themselves are way cheaper to pick up in a big pack at Buford Hwy Market)

~4 cups of water
-florets from 1/2 half large head of broccoli (edit - go with a full head)
-1 container extra firm tofu

Rip open tofu container, savagely cut tofu to sizes you desire
decapitate half the head of broccoli (GO ALL OUT)
Pour about 4 cups of water in, turn on stove.
Go ahead and add tofu and broccoli
Next, tear into the Thai kitchen packets and extract the flavoring packets. Dump into pot.
Wait for pot to boil.
Then add the fragile and quick to cook noodles for 3 minutes as per package.

Voila! Quick tasty pot o' soup for less than $5. This took 8 minutes at most, and can be made with a fever and a damaged finger.

*She wrote a famous book, back in the day. She continually extols the virtues of 'beef tea' which can be given to most anyone.
