One thing that really got me down when I became a vegetarian was the reality that I couldn't eat biscuits and gravy.  While trying endlessly to find a restaurant that didn't serve sausage in theirs, I failed miserably.  Now my friend Marshall says they make veggie biscuits and gravy at Mel's diner in Phoenix.  I keep wanting to get over there to try it out.  Maybe some day.  Meanwhile, I learned to make my own.

This recipe is for the gravy.  I got it ages ago on the internet:




You definitely have to add cornstarch to thicken it up.  Can't have runny gravy.  Also, add one to three cooked Morningstar Farms sausage patties after the gravy is done cooking.  That's how you get that wonderful sausage flavor without the meat (meat eaters can obviously add real sausage).  Then bake up some refrigerator biscuits.  I use buttermilk.  And voilà!

Then I made Alice's Green Soup.

It's simple.

Saute 1 chopped onion (remember my rules, I never use a whole onion), 2 chopped celery stalks and 1 leek chopped in EVOO until translucent.

Add two chopped carrots, a bay leaf, 1/2 cup barley, salt, pepper and 4 cups veggie broth.

Simmer 25-30 minutes.

Add 1/2 cup each frozen shelled edamame and frozen corn (I used canned and it was fine).

Add 1 cup each broccoli and cauliflower.

Cook for about fifteen minutes more.  Don't forget to discard the bay leaf!.




Lately all my soups have been turning to stews.  I've been pretty sucky at getting soup like consistency.  I know it's obvious lack of broth but I don't mind it much.  I rather like stew.

Also, I thought the above recipe would feed me all week but it doesn't look like it's gonna last that long.  So I'll be making more food later this week.  Who knows what?  Not me.  That's for sure.
