GODLY CHICKEN SOUP
It looks ghetto, but this soup is amazing. Serves one for two days, or two/three for one day.
~:~
You Need
- a chicken drumstick (can use more if you'd like, I only used one)
- a carrot
- a parsnip
- three/four stick celery
- a handful of tiny potatoes, or a couple bigger ones
- an onion
- water
- salt
- pepper
- garlic (I used powder, as we have no real garlic on hand)
- basil
- nutmeg
- ginger
You Do
Put the drumstick and the onion in the pot. (I cut the onion in half.) Add abotu three cups water, turn the heat on medium/high. Let it boil. While you're waiting, clean the potatoes. (I didn't cut mine up, but if you're so inclined, go for it.)
When it boils, toss in the potatoes. Add a little garlic powder now, and a bit of salt and basil. Put it down to medium-low heat, and let it cook for another 15 minutes, something like that, however long it takes for the potatoes to get mostly-cooked. (If you can squish them with a fork andthey break, they're fully-cooked.) Hang out. Chill. Knock back a cold one, if you're so inclined.
Cut up the carrot, parsnip, and celery, and toss 'em all in. Add more spices here: more garlic, salt, and basil, and a shake or two of nutmeg, and a very teeny teeny bit of ginger. (Unless you like lots thereof; in which case, maybe a teaspoon's-worth.) Add more water: two cups or so.
Put the heat on low. Let it cook, maybe 15 min, maybe half an hour. Adjust spices and water when necessary, according to your perculiar/particular tastes. Hang out. Chill. Play some solitaire.
The soup is done when the celery gets a little glassy-looking.
