Mmmmm, soup!

I've been really inconsistent about making this at all a food blog, partially because it isn't one, BUT as you know, I will post something about cooking on rare occasion.

Tonight's creation was a Greek Lemon and Orzo Soup, for which I'd found a recipe ages and ages ago and never got around to trying.

Way back when I was a freshman (or "first-year," in gender-neutral Macalester terminology) in college, my family and I ate at a Greek restaurant in St. Paul called the Acropol Inn. The experience as a whole really sucked - the service was excruciatingly slow, and I had a choir concert to sing in that evening, so time was of the essence. I remember that once our entrees came, we essentially gobbled them down and were out the door in 5 minutes, NOT because we had failed to schedule an appropriate amount of time to eat. Anyway, the only good thing I remember about that meal was the lemon soup, which was just...so unlike anything else I'd had before.

I'm still no expert on Greek food, so if you want something that tastes authentic, I couldn't tell you if this is it. BUT it was very easy to make, doesn't have a lot of ingredients, and is really hitting the spot right now. Part of that might have to do with the amount of salt I added, but I am a salt fiend, so that's nothing new. (Seriously, if I die of natural causes, I expect it will have something to do with high sodium levels.) Also, I didn't do pita chips, AND mine looks way more appetizing than the picture. I think it's because of the parsley.

SO, if the soup sounds at all interesting to you, I highly suggest you try it! Just keep in mind that it's pretty thin and not the most filling, so chances are you'll want to serve something else with it if you've got an appetite.
