Today for lunch I tried a recipe I came across while in Australia. It is a pretty simple dish. I think one of the reasons that I gave it a shot was because I had the extra puff pastry sheet from last week. That, and it includes BACON!!
1 puff pastry sheet, thawed
1 egg
1/4 cup milk
6 pieces bacon (I say use as much bacon as you want... it is BACON after all)
3 - 4 tomatoes, sliced
Lettuce, chopped (use which ever kind of lettuce you want)
salt and pepper to taste
baslamic vineager
olive oil
**Preheat oven to 400 degrees.
**Place puff pastry on a baking tray and prick all over with a fork.
**Mix together the egg and milk. Brush the pastry sheet all over with the egg wash. Cook pastry until golden brown. (It took about 13 minutes in my oven) If pastry has puffed up too much, gently press down to reduce size.
**While pastry is cooking, cook BACON to desired doneness.
**Lay sliced tomatoes on the pastry, leaving a slight edge all around. Season tomatoes with salt and pepper to taste. Put back into oven for another 2 to 4 minutes.
**Place BACON on top of tomatoes. Toss the chopped lettuce with a little bit of balsamic vineager and olive oil. Place the lettuce over the BACON.
**Slice up and serve.
I was going to take a picture of it to post, but it looked too good and I was hungry. It was a nice light lunch.
Later tonight I will most likely make Baked Chicken with Honey Mustard Sauce for dinner. It is the same dish that I made for
wissavix and
dethtonge their first night when they visited us in Australia. Since it has been almost three years since I made it, I might even post the recipe again.
