Saturday=Tuesday!!!

Well at least in my world it does.

We ended up having guests over on Tuesday (HI Monica!) and so posting was delayed. Somehow I forgot about my job being really really busy this week. OOps. So instead you get Saturday=Tuesday.

So that Yummy Recipie I was talking about.

Kenny made me Chicken Parm Quesadillas. Yummo! Super easy to make and honestly fairly healthy

Ingredients
Low Carb Tortillas (or any of your choice really)
Thin chicken cutlets, diced
Mushrooms, sliced
Onions, chopped
Fresh Parmersan
Rosmery and Basil (from my garden... come on over and clip ya some!)
Thick tomatoe sauce.

Saute the chicken, mushrooms, onions and herbs in a skillet just until the chicken is cooked. Once the chicken is cooked,remove from heat and then layer the mixture with tomatoe sauce on top of a tortilla. Dont use a lot of sauce or it becomes soupy. Then grate a fine layer of parm over the sauce and top with your second tortilla. Warm on both sides to your liking and serve. This is more of a non traditional quesadilla as it doesnt have the thick layer of cheese to "bind" the quesadilla together.

Here is a pick of one with out the tomatoe sauce. It is not a terribly "original" recipe but is excellent if you can get your hands on some fresh herbs. It definitesly makes a difference in the taste. I forgot to take a pic of the one with the sauce but chicken parm and quesadilla go really well together.

It is a great after run meal!
