As much as he enjoyed taking care of Pokemon, Gold had his limits. Sure, his house was full of Pokemon, but he had his mom helping him take care of them, and they practically raised each other. Those were family. But at the shelter, those Pokemon were orphans who had previous trainers. Not only that, those Pokemon were supposed to go to other trainers. Although the breeder could hypothetically adopt every single one of them, he knew it was irresponsible. What would happen to them if he left? They'd be back to square one with no one else who understood how to take care of Pokemon.

Except for that N fellow. But N was in the same position he was in; if N left, then all the Pokemon would be without homes again, and Gold had a feeling that N would adopt every single one of them.

So Gold spent every day at the shelter, making sure the Pokemon were fed, exercised, and had regular playtime. Sometimes, there would be a freak accident or something where a Pokemon went missing, but turned up with someone from the castle. How it worked out was beyond him, but he didn't mind or care. Whatever gave them a home and him less work.
