I'm watching FMA. Loving it. Have you seen the final movie, PRISONER OF SHAMBALA? I haven't. Don't ruin it. Watching it on YTV, but it doesn't look like they're editing out anything or much.
Watching Naruto. I've read the manga up to the point where the show's at on YTV. They're cutting some stuff out. I'll continue reading the manga until it'll take forever for the show to catch up ... especially since the show does a lot of original episodes. A lot of people don't like that, but I think it's great that the show does original episodes.
I'm watching Bleach. I think I'm only on episode seven or eight. So far, it's kinda cool.
Ranma 1/2 is awesome. I've seen more than half of the episodes, and both movies. Good stuff.
I've only seen one or two episodes of ESCAFLOWNE. They were great.
An anime which I recently enjoyed a lot is THE MELANCHOLY OF HARUHI SUZUMIYA. I also think you might enjoy HELL GIRL and MONSTER. I've seen a dozen episodes of HELL GIRL, and they were great. I've only seen the first episode of MONSTER, but it was really good.
I'll check out some of the other ones you mentioned. Of TSUBASA CHRONICLES, VANDREAD, MAKAI SENKI DISGAEA, CHRONO CRUSADE, RUNE SOLDIER, THOSE WHO HUNT ELVES, CREST OF THE STAR, xxxHOLIC ... and the other ones you mentioned ... which would you most strongly recommend?

One anime that I saw the first two episodes of recently, which showed potential, is ELFEN LIED. The first seven minutes are a splatter-fest, but it seems to be leading into a deeply dramatic story.
I watched the first episode of xxxholic today, and it was quite entertaining, but I'm not going to watch the rest of that series yet if at all ... especially since I just read in wikipedia about the link to tsubasa which is linked to cardcaptors ... and I have a stubborn prejudice against cardcaptors ... for now.
I'm normally more into dramatic stories that express something about the human experience, like OH MY GODDESS or .hack//SIGN.
I've watched the first three episodes of SERIAL EXPERIMENTS LAIN, and that one appeals to me completely. It has a strong cyberpunk element which provokes thought on some levels. If you haven't seen it, watch it.

I've read the first dozen or so chapters of One Piece, and seen several episodes, and it's already on my list of things to finish watching when I can :)
