Pad Thai for dinner

Tonight I made Pad Thai noodles for dinner, following this online recipe.  It came out nicely.  I substituted sushi vinegar (which is sweetened) for the tamarind, and used only 1-1/2 Tbs. sugar.  Also, instead of crushed red pepper I used a little Sriracha sauce--I wanted to go easy for my son, he's not fond of super-spicy food.  Mistakes I made were: overcooking the peanuts and undercooking the noodles.  But the flavor is great, and when I heat the leftovers I can cook the noodles a little more.

I highly recommend this recipe.
