Lunahsea's Black Bean Wrap Filling

1 cup red pepper diced
1 cup yellow pepper diced
1 cup red onion diced
1 cup zucchini diced
1 yellow squash diced
2 cloves garlic chopped
1 tablespoon chili powder
2 cans of black beans
Your choice of wraps

Sautee garlic in two tablespoons (or more) of olive oil. Add the rest of the veggies, cover, stirring frequently until tender. Remove from heat. Open and drain the black beans. Move to a bowl and masher with a potato masher or back of a spoon. Add the chili powder (1 tablespoon is a good starting point; you may want to add more)to the black beans and mix thoroughly. Add bean mixture to veggies until well blended. Spoon mixture into the center of the wraps, topping with cheese and/or salsa. Fold wrap and enjoy!

We served this at Lunahsea and it was by far the most popular item on our menu. Let me know if you try it out~
