The dry milk increases nutrition in this dish without adding fats. You can also substitute protein powder for the dry milk.
Ingredients:
3 cups milk (I used oat milk) 3/4 cup nonfat dry milk or protein powder 3 eggs 1/2 tsp vanilla extract (I used same amount of real vanilla) dash of ground nutmeg
Directions:
Preheat oven to 350°.
In a saucepan, combine milk and dry milk (or protein powder). Place over medium heat and bring to a boil, stirring constantly to dissolve dry milk.
In a small bowl, beat eggs lightly. Add vanilla and a dash of freshly ground nutmeg and then stir into heated milk very slowly (don't want to cook the eggs).
Pour into 4 custard cups, sprinkle with a little more nutmeg and place in a shallow pan of hot water.
Bake for 40 minutes, or until set.
You can put crumbled sausage into the cups first, for a savory custard. Or fruit - berries work nicely, or chopped apples tossed with cinnamon.
I like this for breakfast, but it also makes a great snack, or even a dessert (especially with fruit).
I use soy powder instead, but I have a stick blender which I use to mash a banana. Then I add a cup of very cold water and a scoop of powder and blend it into a smoothie. I used to add a tiny bit of instant coffee to help conceal the flavor, but I ran out. Just banana suffices.
I find whey powder to be tolerable in steel cut oats even though I find it horrific in instant. steel cuts oats microwave reheat tolerably well if you have access to a microwave. make them thinner than you want them. fruit helps.
