I made a banana cake today and found the eggs in my dad's fridge were from August. Since I had a flat (my car seriously enjoys fucking with me) I couldn't go out and buy them so there was a slight panic; what's a birthday party without cake? All turned out well though -- I just had to modify the recipe beyond recognition.
Eggless Banana Cake:
- 1/2 C butter
- 1 C white sugar
- 3 large bananas
- 1 1/2 C flour
- 2 t baking soda
- 1 t vanilla
- 1/2 t salt
Bake at 350° for 30 minutes in a greased and floured pan.
I also used a tablespoon of vinegar because I was afraid the lack of eggs would cause it to be flat and hard but I think that was unnecessary. Next time I'll use lemon juice instead. And wait until the bananas are black instead of just ripe.
