In other exciting news, I'm making beef stock. I was very nervous to try this, as I've read that beef-stock-making is exceedingly smelly, and I've got one of the world's most sensitive noses, so these beautiful beef bones have been in the freezer for a good, long while. I don't know why someone thought it was exceedingly smelly. I find it exceedingly fragrant (in a good way). I prefer it over the smell of making chicken stock, by a long shot. But I'm weird like that. Remember, I like the smell of all my ferments.
