Escaping garlic scapes

I acquired a stash of garlic scapes. After seeing rumorofrain's garlic scape pesto recipe and a similar recipe from the Washington Post, I decided that would be the way I would use my garlic scapes. Have you ever worked with garlic scapes? Have you ever tried to, say, slice them into quarter-inch increments? These things are more unruly than a teenaged child.



I kept trying to do these Buddha-like practices. I am one with the curly garlic scapes. Notice the garlic scapes. Notice the knife trying to go at them while they whip this way and that. Notice the cutting board that seems to miraculously heave them onto the floor. Yes, I am one with this moment of cursing at trying to slice garlic scapes. It didn't work. I've read that Buddha practices can take a great deal of practice. Obviously so.

My dad made that cutting board, by the way. After years and years of daily (at least) use, he informs me that I should oil it. Better late than never, I guess. I told him I needed another cutting board. He graciously sent me one. It's too beautiful to use. Like the papermaking deckle and mould he made me. These are works of art. They go untouched.

I keep asking for a cheese press. If he ever gets around to making one for me, I hope it's not too beautiful to use. I really need a useable cheese press.
